# Calafate: The Berry Behind Patagonia's Flavors and Legends

[Contenido\_LasTorres October 19, 2026](https://blog.lastorres.com/author/contenido_lastorres)

- 5 mins

In Chilean Patagonia, among mountains, forests, and vast open plains, grows a small berry that has become part of the region's identity: the calafate. With its deep purple-blue color and sweet yet slightly tart flavor, this wild berry is known for its natural properties, its place in local cuisine, and an age-old legend passed down through generations.

According to local tradition, anyone who tastes calafate is destined to return to Patagonia someday. The legend remains alive in southern Chile, making this little berry one of the most recognizable symbols of the Magallanes region.

## What Is Calafate and Where Does It Grow?

Calafate (*Berberis microphylla*) is a native shrub found in Chile and Argentina, particularly across Patagonia. In Chile, it is most commonly associated with the Aysén and Magallanes regions, although it also grows in other parts of central and southern Chile.
![mapa\_patagonia](https://blog.lastorres.com/hs-fs/hubfs/mapa_patagonia.png?width=900&height=476&name=mapa_patagonia.png)

This thorny shrub can reach up to 2.5 meters (8 feet) in height. It grows naturally in open landscapes, Patagonian steppe, and areas bordering lenga and coigüe forests, thriving in the region's challenging climate.

In spring, its branches are covered in small yellow flowers that eventually give way to round, dark blue or purple berries as summer arrives. The fruit typically ripens between January and February, developing the distinctive flavor that has made it a traditional ingredient in Patagonian cuisine.

In places like Torres del Paine, calafate is part of the native vegetation that shapes the landscape, growing alongside many other plant species characteristic of Patagonia.

## A Patagonian Berry Rich in Natural Goodness

Beyond its distinctive flavor, calafate has attracted attention for its nutritional properties. Research has found that these berries contain high concentrations of natural antioxidants, particularly polyphenols and anthocyanins, the compounds responsible for their deep color.

Antioxidants help protect cells against damage caused by free radicals. Calafate also contains vitamin C, an essential nutrient that supports normal immune system function.

While scientists are still exploring its potential health benefits, the berry's nutritional composition has sparked growing interest among researchers and the food industry.

But calafate's importance extends well beyond its nutritional value. In the wild, its berries provide food for various bird species and other animals, while the shrub itself offers shelter to insects and smaller creatures, playing a role in Patagonia's natural ecosystems.

## The Legend of Calafate: Taste the Berry, Return to Patagonia

One of Patagonia's best-known legends tells the story of Calafate, a young Aonikenk woman who fell in love with a Selk'nam man from another Indigenous community. Their families disapproved of the relationship, so the couple decided to run away and build a life together.

## ![Gemini\_Generated\_Image\_moqnfqmoqnfqmoqn](https://blog.lastorres.com/hs-fs/hubfs/Gemini_Generated_Image_moqnfqmoqnfqmoqn.png?width=900&height=591&name=Gemini_Generated_Image_moqnfqmoqnfqmoqn.png)

When Calafate's father discovered their plans, he turned to a sorceress to prevent his daughter from leaving her people. The sorceress transformed Calafate into a thorny shrub, preserving her beautiful golden eyes as delicate yellow flowers.

Her lover searched for her for a long time, never knowing what had become of her. Moved by his sorrow, the sorceress transformed the shrub's flowers into sweet purple berries, each one symbolizing Calafate's heart.

According to this version of the legend, anyone who tastes the fruit falls under its spell and will one day return to Patagonia, no matter how far away life takes them.

The story gave rise to one of the most beloved sayings in Magallanes: **"Whoever eats calafate will always return."** It is a simple phrase that captures the berry's deep connection to the culture and identity of Chile's far south.

## Calafate Sour: A Cocktail Inspired by Patagonia

Calafate's place in regional culture extends to the world of cocktails. One of the best-known creations is the **Calafate Sour**, a Patagonian twist on Chile's classic pisco sour, blending the berry's distinctive flavor with the traditional combination of pisco and lemon juice.![VOLUNTARIOS-GRUPO 1-2026-BARTENDER-FOR-A-DAY-00968](https://blog.lastorres.com/hs-fs/hubfs/VOLUNTARIOS-GRUPO%201-2026-BARTENDER-FOR-A-DAY-00968.jpg?width=900&height=600&name=VOLUNTARIOS-GRUPO%201-2026-BARTENDER-FOR-A-DAY-00968.jpg)

With its vibrant color and refreshing balance of sweet and tart flavors, it offers a delicious introduction to the tastes of Patagonia.

At **Hotel Las Torres**, located in the heart of Torres del Paine National Park, the Calafate Sour holds a special place in the guest experience. It is the welcome cocktail served to every guest upon arrival.

This tradition offers visitors their first taste of one of the region's most iconic berries, along with a glimpse into the stories and traditions that make Patagonia so special.

Calafate also takes center stage at [Bar Pionero](https://lastorres.com/descanso-y-entretencion/bar-pionero/), where cocktails celebrate local ingredients and produce grown in Las Torres Patagonia's biointensive garden.
